Did you know that herbal tea isn't tea at all? It is actually an infusion of herbal leaves and spices, but without the noble tea leaf in the mixture, it's really not tea. Many people do like to "tea" with these herbal infusions for reasons ranging from variety, to a need to cut caffeine out of their diets.

There are at least 396 herbs and spices available commercially for use in "herb tea" but be sure when you're making your own that it's pesticide free. Here is a Soothing Tea recipe I found in Victoria's book, "The Pleasures of Tea."

If you enjoy gardening, you might want to grow your own herbs for your tea. Not everyone has the knack for growing things organically, but this would ensure a "pesticide-free" herb if you followed that growing doctrine. Soothing Tea

Linden leaves and flowers (sometimes called basswood or lime) are legendary for calming the nerves and promoting restful sleep.

1 tablespoon linden leaves and flowers
1 tablespoon chamomile
1 tablespoon fragrant rose petals

1. Pour boiling water into the tea pot and set aside for 45 minutes. Then discard the water.
2. Gently crush the linden leaves and flowers, chamomile and rose petals to release their flavor. Put them into a tea ball, cover the tea ball and place in the tea pot. Cover with boiling water and let steep for 5 minutes.
3 Remove the tea ball from the tea pot. Serve the tea immediately.
Makes 4 to 6 servings
